Hey, friends! Yesterday was National Spinach Day so I decided to share a yummy, simple and easy recipe for healthy Spinach pesto! Yes, please!
I love pesto – It is such a fun addition to sandwiches (adds a little zing), pasta, appetizers, and more!
Here is what you need:
- 2 1/2 TBSP Dried Basil
- 2 Cups fresh Spinach
- 4 cloves of garlic, chopped or minced
- 1/4 cup of olive oil (I actually used a little less than this)
- 1/2 cup toasted pine nuts (yum!)
- 1 1/2 TSP lemon juice
- 1 TSP Sugar
- 1/6 cup Parmesan cheese
Place all ingredients in a food processor and pulse/blend til mixed!
Enjoy! (P.S. Spinach is filled to the brim with antioxidants so this pesto is pretty much a miracle mix!).
