Happy Wednesday, Friends! Today I am so happy to share with you a fun little recipe I created for a yummy and filling breakfast!
If you haven’t been able to tell already, I love pulling out all the veggies I have in my fridge and throwing them into my meals – it is kinda my thing 😉
So I put a little olive oil in a pan! and I chopped up all the veggies I had (onion, mushrooms, asparagus, broccoli) and threw them on it to cook!
After they cooked for a bit, I added my curry spice mix! (cumin seeds, cardamom seeds, turmeric, ginger, dried mustard, fenugreek seeds, pepper, cinnamon) – I buy mine pre-mixed but you can make yours at home and base it off of the flavors you like!
Once this has simmered a bit, crack 1-2 eggs on top and allow it to mix in almost like an egg on fried rice would! If you’re feeling a bit crazy, you could add a Tablespoon of cheese! Yum!
You could put this mix in a whole-wheat wrap, on toast, plain or in NAAN bread – special treat 🙂 SO yummy! Tip – make sure to warm it up!
This breakfast will fill you up for at least half the day, and it is a great way to get protein and your veggie servings in!
