Morning, Everyone! Today is National Pack Your Lunch Day, and I just wanted to share with you guys a few thoughts on this!
I am a huge advocate for making and packing your own lunch from home! As a child, my mom always packed me a lunch… Every. Single. Day. I was always incredibly jealous of the kids who got hot lunch, and it wasn’t until I was older that I realized how lucky I was. I was so lucky because I had a mother who instilled healthy eating habits from a young age so that I grew up to feel the same way.
So now, I always, ALWAYS pack a lunch. I do this because then I get to know EXACTLY what goes into my lunch and therefore, into my body!
One of my favorite lunches is a nutrient-packed salad! This is because you can literally throw anything into a salad, and call it a lunch! I love the book “SALAD LOVE” by David Bez.
For example, I love to throw all the veggies I have into a bowl, maybe an apple, some unsweetened dried cranberries, and nuts (protein!!), along with some goats cheese and a nice homemade vinegarette!
Of course, I pack a ton of snacks because I am 100% a grazer!
