Cake Pops!

Hi, friends! I thought I would start this blogging week (I know it’s Tuesday, but give a girl a break) with a fun “guilty” post… AKA a sweet treat to brighten your week! I think we all deserve a little treat every once in a while. Life is all about moderation, right?! As some of you may know, I am a nutrition student… This means that I have a good grasp on living a healthy life through diet. But restricting oneself from all sweet treats tends to lead to over-indulgence and over-eating and therefore, treating yourself every once in a while (but knowing your limits) is important!

So, let’s talk about a simple cake pop recipe. Things you need? A cake, chocolate fondant (super cheap at Michaels!), some lollipop sticks and of course, some fun and creative sprinkles! Like the ones pictured here from “Fancy Sprinkles.”

Step one: bake a cake, any cake, honestly. You could make it from scratch, you could use a box mix or anything in between – heck, you could probably even use brownies!

Step two – once cake cooled, cut off all the edges (the harder parts of the cake)

Step three: Crumble the cake – yup! Go ahead and destroy that cake!

Step four: Mold cake into balls – I find using a cookie scoop helps to make uniform balls.

Step five: melt the fondant in the microwave in 30-second intervals – longer will cause it not to form properly. Add a teaspoon of Crisco to allow it to be more fluid.

Step six: dip lollipop sticks into fondant and then stick into cake balls

Step seven: Place the balls in the fridge for a minimum of 20 minutes!

Step eight: reheat the fondant, and now dip the cake pop into the chocolate! Use sprinkles right away because the chocolate hardens within 30 seconds! These sprinkles from Fancy Sprinkles had me at hello!

Step nine: uhh enjoy obviously! But make sure to have as a treat every ONCE IN A WHILE!
