Mini Matcha Donuts

I am SO excited to be sharing a fun food recipe today! It has been TOO long since I last posted about food, dessert, drinks, ect., I was so lucky to get the chance to collaborate with Enzo Matcha. I love matcha, whether just as tea or added into a smoothie! I was thinking of sharing a match smoothie recipe on here, but then I decided to step out of my comfort zone and try something new and I am so happy I did.

Mini Matcha Donuts

I found this Green Tea Donut Recipe by Just One Cookbook and I knew that this was something I had to try. I had one problem though…  I don’t own a donut pan! So naturally I googled it. I came across this idea about using tinfoil in a muffin pan. I usually fail when it comes to ingenuity combined with baking… So I did not have my hopes up. To my surprise, it turned out AMAZING!

The only thing I switched out of the recipe was cake flour for regular flour! It makes the donuts more dense, but I like them that way 🙂

This recipe is SO easy, and if you don’t have a piping bag – no worries! Just put the dough into a plastic bag and cut off one of the corners! The donuts only take 8 minutes to completely bake, so leave them in for 4 and then rotate the pan! 🙂

The icing is super easy… it contains one ingredient – chocolate chips! Just melt them using a double boiler (place a metal bowl inside a pot that is filled with water. Add chocolate chips to the bowl. Stir continuously as the water warms and melts the chocolate chips). This makes the chocolate chips perfect for dipping the tops of your donuts in! If you feel a little crazy, add some sprinkles like I did! So yummy.

    This is such an incredible idea <3 I love matcha and I love donuts. I am a vegan, however, so I would need to swap out a few ingredients, but I'm sure they would be just as tasty.
